Fish Tacos...using Mahi-Mahi We like tacos, fajitas, burritos, gyros...basically, anything rolled up. So sometimes, I'll fix us something quick and healthy...like this fish taco I made recently. It became a quick lunch one day. Very good and satisfying, yet not heavy at all. There are other versions of fish tacos out there. The recipe may have the fish battered and deep fried. Sometimes even the tortilla is fried. I chose to keep mine simple and a bit healthier. We like it this way. But, if it were up to me, I would take the battered fish any day. I like crispy, battered fish. Actually, I love anything battered. But I also know that it isn't exactly the healthiest, either. Oh, I'll have it every once in a while... like when I am craving some good fish and chips:). But most days, I prefer healthier alternatives.
This recipe is quite easy and quick to make. It's especially great to make when you want something fresh and light. While the fish is marinating, I will get the toppings ready. I'll fire up the grill and we will have a healthy meal in a matter of minutes. For this recipe, I made the fish tacos with basic and common toppings. You can easily experiment with different sauces, like a chipotle/cilantro sauce. Or, you can serve it with a yoghurt sauce, such as tzatziki. Why, you can even add some Black Bean and Corn Salsa, Salsa Verde or Avocado Sauce. Also, feel free to experiment with different seasonings for the marinade. You can use one or all of the toppings. It really is up to you.
I don't always use all the toppings. Sometimes, I like to keep the fish taco simple... I just add some fresh cilantro, red onion and a splash of hot sauce. I usually grill my fish...that's because we love the grilled flavor. But if you don't have a grill, you can bake the fish in the oven as well...even in a skillet. I like to use mahi-mahi or halibut. But, you know... you can use whatever fish you have on hand and like. The firmer fish works best on the grill as it keeps its shape and doesn't fall apart as easily. So, if you would like to use another kind of fish that's not as firm, either bake it in the oven, or cook it in a skillet. The fish marinade is similar to a chimichurri sauce, but with a bit less oil. I find you don't need a great deal of oil to coat the fish fillets. Add more if you need it, but a little oil can go a long way. Do not let the fish marinade in the sauce too long, as the lime juice can "cook" the fish. Feel free to adjust amounts in the marinade to suit your liking. Hope you enjoy....

Directions:
In a bowl, mix all marinade ingredients. Pour over fish. Cover and let sit for 20-40 minutes.
